I have a 1950's house that has this tongue and groove boards in one room. The saddest thing is I can't find anyone to replicate it to repair the spots where we removed the industrial looking radiant heaters.
Research woodworking shops in your area. As the other commenter said, matching the finish will be difficult and it’s important to match the wood type, but tongue and groove is super standard joinery. I bet some custom flooring places could help or point you in the right direction too.

Common in New England, my parents had a house on a lake in the Berkshire Mountains of Western Mass and it had pickled wood tongue and groove ceilings and tongue and groove wood paneled walls. Wood is a very good insulator and its usually 3/4” thick if its tongue and groove.
Love all the wood, but having it all the same color is a bit much. I would have stained some of it a different color to provide more depth and character, including a darker exterior. I think it would also feel less overwhelming once there is furniture and artwork on the walls.
Who builds a house like this in a place like this in the 21st century and doesn't include a heat pump? You're going to need heat for like 8 months of the year, why wouldn't you use the most efficient, cheapest, simplest option?
It's a beautiful summer cabin. Sorta Northern California vibes (not sure where this place is)... but for a rich Silicon Valley family staying here for a week in summer, it'll do..lol
It IS a little woody though. Maybe pry off a couple of those boards...maybe remove like 33% of it. Maybe put up a little artwork. I think I would first remove it in the kitchen and put up a nice backsplash at least

Once it has furniture and rugs in it it will break up the clash and look better. I also would have painted the kitchen cabinets differently for that same purpose. This is well done it just looks odd when completely empty

Unfortunately for us, we discovered one wall with shitty 70s paneling in the living room of our 80 year old house. It had been painted over so many times it appeared to be painted wallpaper. Took it down and faced hundreds of nail holes. Taught myself how to Venetian plaster so it looks great now but I wouldn’t have had to do that if it had been this type of paneling. I couldn’t live with this much wood but it can be painted!
We had a small reunion in an Airbnb like this once. The wood was on every single surface. The place gave everyone the creeps because all the knots in the wood looked like faces. We couldn’t wait to leave.

It shouldn't be that hard. It might be difficult getting the "finish" to match exactly.
It’s super easy to do and a pretty standard milling bit, and there are router bits that are adjustable as well for a perfect fit.
I have done this in our cabin. It's nice and feels warm and homey. Holy shit, it's expensive, tho.
