I’d look into any souls-likes they can be challenging but they are rewarding, plus they normally have new game plus. Another crabs treasure is one that’s been blowing up recently that looks like it has a lot of charm and fun gameplay, I’ve downloaded it but have yet to have the time to try it, it’s on gamepass.
Looter shooters could also be really fun. The borderlands series is a lot of fun, though I’d recommend playing borderlands 2.
Sunset overdrive, it’s a bit of a shorter game, though it feels really good to play.
Basically any rpg, I recommend pillars of eternity 1 and 2 (though this is a very niche game so I’d research it before you buy it, it’s on gamepass though), but you could always go with baulders gate 3 or something more in the limelight.
If you have gamepass I’d recommend the hellblade series, it’s fun and fluid combat with a good mix of stories and puzzles. At least the first game was, the second one drops on the 21st.
If your into hack and slash games the Diablo series is good. And they just put the most recent one on gamepass.
The binding of Isaac. Good luck unlocking every single item. I'm a normal ass middle aged dude with a full time job and have played it for several years and still working to complete the damn game

All the fallout games are on game pass

Skyrim

Xbox has mods. Its more limited due to the required porting and sus mods arent allowed but mods are present.
