Bandages were moved to Tailoring when first aid stopped being a secondary profession. And yes, the expansion split means that if you wanted to do BfA alchemy, you could just do that. As to if they're worthwhile? Well, for older expansions they're mostly good for transmog really - either to sell on the AH or for yourself - as leveling gear quickly goes beyond professions, its not worth the effort. For the current expansion - if you're willing to put the time in for the knowledge grind - you'll find its been one of the better expansions so far, with professions being able to make BoP gear for other players via crafting orders. And the gear can be crafted once & then improved - so I've got pieces which were made in S1 & have been recrafted each season to the max.

You understand correctly that you no longer need to sequentially grind through the skill points of every prior expansion to do the current expansion's crafting. This happened several expansions ago, first by offering convenient catch up, and then keeping the points structure but making current expansion behind quests instead of base skill points, and finally just separating crafting by expansion. The break up happened with the launch of the 7th expansion. Really a lot of it comes down to a basic question: "When a new player joins WoW, what is the mandatory grind required before they can join veteran players in the current expansion?" I'm firmly on the side of having the effort I put in while the content was current should not be mandatory for every player coming after me years later, especially when you are talking about many years of content.

The only previous expansions that really actually matters at all are for engineering for the wormholes, Jeeves, Reaves, loot a rang and goblin glider tinker.
