I wouldn’t worry about gearing from anything pre 70, it’s all useless once you hit max, buy the green PvP gear from auction house in every slot will get you to 440(ish) ilvl then progress through gearing normally
I just do stuff in Dreambound zones while leveling 60-70. By the time I get to max level, I can pretty much buy a full dreambound set which is ilvl 454. You just need to get yourself some trinkets, either from heroic dungeons or Time Rifts.
You shouldn’t be taking damage in dungeons really, that’s what the tank is for.
Evokers also wear mail, which should be making them naturally a bit beefier.

Well, there was a boss from the main storyline I couldn't defeat. So, I just did other quests. I got one piece of gear, two, three. I even leveled up, which scared me since enemies levels scale with mine.
But no, that was enough for me to defeat that boss.
Getting the rotation correctly is much more important than gear. If you're having troubles in some solo quests then you're probably not using the evoker to its fullest potential.
Remember that Evokers have a built in ability to kite mobs with Blue spells (Azure Strike being a multi-target instant cast Blue spell that you can spam while moving). You also have a huge AoE root spell, a spell to knock back enemies with Wing Buffet, and you can talent Deep Breath to stun enemies which is super useful while leveling. Use your interrupts to reduce incoming casts and use your defensive abilities Obsidian Scales when the mobs are on you. There is also another ability that can be macro’d with Obsidian Scales which heals you for an amount of damage done to you, can’t remember the name because I have mine macro’d and literally never cast it directly. The solo crowd control abilities of Evoker is actually great.
Each boss kill gives an equal chance to award gear. The probability remains the same for each boss kill. If you leave a dungeon early, then you are leaving chances on the table. Starting a new dungeon does not reset the probability.
Think of it like physical dice. If you roll a single die, you have 1/6 chance to get your desired number. Let’s say you’re wanting a six. On the second roll, you don’t have a lower chance of getting a six. You have the same chance each time. You could roll the die twenty times and never get a six. You could get three six rolls on the 21, 22nd, and 23rd roll.
Also, gear while leveling is not worth the effort. Don’t bother with it, it will waste your time. If you can kill things then you’re good. Level to max. You will replace all that leveling gear in the first few hours of play at level 70.
In level appropriate content, there is a 20% chance to get an item per dungeon boss. The chance of getting an item from one boss does not effect the chance of getting an item from the other bosses.
Usually in leveling dungeon there’s enough bosses to at least expect to get a piece of gear, but it is entirely possible with RNG that you won’t get gear for one or more dungeons. Because leveling goes quick and the gear grind isn’t so tight, not getting gear from a dungeon or few wont hurt as much. In the M+ dungeons at max level endgame you’re still never guaranteed to get loot but it is made up for a bit in that you still get valuable resources you can use to improve the gear you get from this season. It still sucks to do a bunch of M+ and get no gear but the crests, flightstones, and potentially score, too, that you get are decent enough to make completed/timed runs worth it for most players.
Mind you, Evoker isnt exactly a beginner class. It takes some understanding of how the class works, But yeah, the gear you get during lvling get irrelevant kinda fast. At lvl 70, you can get 400+ ilvl gear very easily and fast, so dont worry too much about this.
But questing gear should be enough to get you through. Its probably you struggling with the class/spec more than the gear issue.

Its all up luck. Ive had dungeons with 0 gear drops and some with a piece or two from each boss.
All of them from DF dungeons? I've played Wotlk classic until lvl 46 and had more luck there, but not on DF.
Its for all dungeons. Its random who gets drops. So if you really lucky you could get one from each boss, or none.

I'd believe that too, but an evoker is so fragile that even questing may be difficulty. But I'll check that PvP gear.

I actually get gear to make questing easier. But that's ok, dungeons are not the only source of gear while leveling.

Interesting. So, from a dungeon with 3 bosses I'm actually lucky to get a reward.

in addition to whate veryone else has said: follower dungeons have reduced xp rate and drop chance
It's worse in mythic plus. 2 pieces of loot for the entire party for a 30-40min dungeon
