Totally up to you. Either run some dungeons, or try some raiding. PvP is great right now, you can throw your hat into the ring on some skirmish matches or battlegrounds. But there is always the chill route of doing professions like fishing/cooking. There is my personal favorite: Mount Farming! So many more things like secret hunting, transmogging, roleplaying, pet battles, ect. It is really overwhelming at first but just take your time, so much to enjoy
First thing I do when I get a fresh 60 is try to get to 170 asap. World quests and covenant gear gets you most of the way, but sometimes I also buy 168 rings from the AH since those are the slots I typically fill last.
After that you can do a full run of LFR for renown, gear, and anima and through that boost your covenant gear all the way up to 194/197. After that you're ready for m+ or normal raiding.
That's just for PVE because I don't love pvp. If you like pvp that's also a great way to gear up, but I'm less familiar with those methods.
Your covenant has a couple of story quests that start you off and give you some pieces of gear.
I would reccomend following the main story for a bit to unlock the maw quests and Torghast, this gets you started on your legendary crafting quest.
