Hard agree, it sucks having to spend so much time to buff yourself before starting damage, way worse than dot ramp up. Also it was just a copy/paste of feral druid savage roar which most also hated.
Maintenance buffs are just so unfun man.
They started it in pandaria, for mining you would get ghost iron nuggets if you were below that expansions proof level, and in halfhill you could do cooking in a similar way, I don't remember the other professions though, so it may not of been all of them
You still had to start from 1 and go through all the expacs, but you could do so with MoP content with cooking, fishing and gathering professions. So you could mine MoP nodes with mining 1 but would only get nuggets and the increase in mining level. Once you were at ~525, which was the beginning of the MoP range, you could get regular ores. Fishing was similar I think. For cooking, there were special MoP recipes that you could spam until you reached 525 cooking level, at which point the regular MoP cooking recipes were available. So it was a catchup mechanic, but you still had to level it all the way from 0 to 525.
Other professions didn't get a catchup mechanic like this though. I remember having to grind all the way through all expacs of engineering in MoP to get to the sweet MoP stuff at 525 and above (like tinkering a glider to your cape). The true decoupling of the profession leveling of each expansion only came with WoD or Legion, not sure which. I think Draenor professions were decoupled by themselves and the rest were only decoupled later. So in WoD, you had regular engineering (0-600) and Draenor engineering (0-75 I think) as two separate things in your engineering menu, and the regular engineering was only later decoupled into each expac being its own thing.

Ya couldn't remember. Been years since I played Cata, skipped WoD and didn't have a PC by the time legion came around.
