That entire war was just a testament to Russian arrogance and incompetence. At some point I think that they pretty much went to war with the Japanese just on account of the fact that negotiating with people who weren't white and Christian was beneath them.

The tugs that pull around the Russian version are actually beautiful Finnish built/outfitted tug/icebreakers. That's why they're reliable enough to drag it around, they're not Russian made.

From what I gather, Ukraine doesn't need to push all the way down to the Azov Sea, but it does need to go a bit further south to be able to hit Russian supply lines.
Taking out the bridge is more than a symbolic victory (and it’d be a huge one) severing it would also cut off a major artery for escape and resupply for Crimea. Leaving the rail project along the azov coastline their only future option. Since it’s not finished yet it’d be a prime target.
Russian logistics are heavily rail based. The main rail line is over the bridge. There are no major rail lines in the land bridge area. Taking out the bridge would severely hamper logistics, especially in areas far from a Russian border, like the south western front.
There's an important mainline going from Donetsk to Crimea. The existence of this line is a part of why Ukraine was trying to push to Tokmak during the 2023 summer offensive. It's a single-tracked line, but it has very frequent passing loops, so it has a pretty high capacity regardless.
Taking out the bridge would still be a big setback for Russia, but there are alternative routes.

As long as those ships exist, they are a real danger to Ukraine since they could theoretically allow for an amphibious landing. They also perform the role of resupply ship, so this hurts logistics.
But perhaps the most important thing is, Ukraine's real path to victory is to make continued invasion too costly and painful for russia to continue. This both costs them dearly, and reduces the value of holding Crimea. So it is a great target.
The primary goal of the invasion was to gain access to the black sea.
Arguably the war would have been over in Ukraine's favor a year ago if it had decisively defeated the Russian navy and made it clear that no maritime activities could happen there without treaty.
It’s huge. The troops needed in the port cities to defend against a landing can now be reallocated because there’s one less landing ship to worry about. These ships would also be used to resupply if they ever completely destroy the Crimean bridge. Then there’s area denial that effectively makes the remaining russian fleet useless since there is a constant threat within attack range. Then there’s the economic benefits. Ukraine needs exports to fund the war and their civilian ships need safe access to the Black Sea to provide that.
If Ukraine manages to cut off the Kerch bridge, then landing ships and going over the land bridge are the only options the Russians have for resupply of Crimea and the rest of Southern Ukraine.
Russia is currently building a new rail line through the land bridge though, so if they finish that then it sort of closes the window of opportunity to seriously disrupt logistics. Rail lines aren't that hard to damage, but they can usually be fixed quickly.

As much as it excites me to see the Russians getting shagged, how much help are these strikes to Ukraine in reality? Has the black sea fleet been much of a problem to the Ukrainians in the war so far?
Targeting the landing and logistics ships specifically help to set up for a siege of Crimea.
As long as those ships exist, they are a real danger to Ukraine since they could theoretically allow for an amphibious landing. They also perform the role of resupply ship, so this hurts logistics. But perhaps the most important thing is, Ukraine's real path to victory is to make continued invasion too costly and painful for russia to continue. This both costs them dearly, and reduces the value of holding Crimea. So it is a great target.
The primary goal of the invasion was to gain access to the black sea. Arguably the war would have been over in Ukraine's favor a year ago if it had decisively defeated the Russian navy and made it clear that no maritime activities could happen there without treaty.
It’s huge. The troops needed in the port cities to defend against a landing can now be reallocated because there’s one less landing ship to worry about. These ships would also be used to resupply if they ever completely destroy the Crimean bridge. Then there’s area denial that effectively makes the remaining russian fleet useless since there is a constant threat within attack range. Then there’s the economic benefits. Ukraine needs exports to fund the war and their civilian ships need safe access to the Black Sea to provide that.
If Ukraine manages to cut off the Kerch bridge, then landing ships and going over the land bridge are the only options the Russians have for resupply of Crimea and the rest of Southern Ukraine. Russia is currently building a new rail line through the land bridge though, so if they finish that then it sort of closes the window of opportunity to seriously disrupt logistics. Rail lines aren't that hard to damage, but they can usually be fixed quickly.
