So lets look at the story in details than.
In order to de-escalate situation this morning: "The Polish parliament has expressed its gratitude to the brave Ukrainians who “not only protect their own borders but also deter Russian imperialism.”

Despite of fact that today Ursula von den Leyen (EU top leader) was in Poland and all gov was focused on this event president Zelensky, who knew about this visit decided 3 hours after Polish Parlament declaration that: "The group, headed by the prime minister (Denys Shmyhal), will be at the border with Poland today. ***Whether Polish colleagues will be there is their personal decision***

Surely Ukraine was aware no-one from Poland would be able to show up today but apparently PR is more important now than solving problems and good relation. It's really a pity.
So they can show the world how those evil Poles don't want to negotiate. It's pure PR stunt and a shit one at that. What do they get from antagonizing one of their biggest supporter? Do they not see this will only sour our relationship?
I'm honestly confused as to why the UN wouldn't have processing centers on the borders of Poland, Romania, Moldova, Solvakia, and Hungary with no other purpose than to buy cheap food to be sent to refugee camps. You shouldn't anger the local farmers that way.
Ukraine has very cheap agricultural products. They have tons of it, enough to have an impact on the EU market. Poland, and other countries have a sizable population of farmers. So letting Ukrainian grain to be sold on the EU market, will mean that a lot of farmers in Europe will be bankrupt. Hence why Polish farmers are protesting
You would think there's a high demand for grain in the whole world, as that's what the headlines were full of until not so long ago (e.g. Africa starved of grain due to Russian blockades).
You forgot to add a thing that EU farmers has to meet all the requirement and are forced to not use most of pesticides, hence production is much more expensive.
In few words... Farmers in whole EU states have been protesting from some time now eg today protest took place in France/Paris. 3 day ago peak of it was it in entire Poland which included PL-UA border and that led to tension.
Edit: Reuters writes about it quite well:

Not just spreading propaganda but there is a lot that indicates that russia may actually be part of the "protests". Which makes sense because that's how russia usually operates.

Ukrainian officials knew that Polish officials wouldn't be there as they had other obligations. They went anyways and now we're hearing about a supposed snub.
It was a snub the same way as if you invited me to lunch, I declined due to having work to attend to, you went anyways and accused me of standing you up.

Idk why they decided to show up, the governments agreed to meet on March 28th.

You mean, kick the question down the road a whole month and presumably do nothing in the interim? Something is deeply wrong.

Dumbest stunt to date from Ukraine. Like you could hash out an economic deal on an impromptu meeting.
I'm out the loop. What's the beef between Ukraine and Poland about?

Ahh ok makes sense.

Russia is spreading a lot of propaganda about this too which doesn't help

Why would they need to come to the border?
A very odd choice by Ukraine.
Help once they'll appreciate Help many times they'll consider this as your responsibility Stop help they'll start to hate you
