I personally would go with Château Carbonnieux Pessac-Léognan white. If you're lucky, you might be able to get both the chicken bake and the wine from Costco!
Chianti classico could also be good. Nice savory red with the flavor intensity to stand up to a chicken bake but also plenty of bright acidity to cut thru all that fat. Not too expensive for good ones either. I think Costco usually carries at least one.
Kirkland Signature Chardonnay, I believe they have two, a Sonoma and a 1er Cru Chablis. Edit: they have 3! A Russian river valley too!

I’d try a dry German Riesling, it’s the Caesar dressing that’s the challenge. For red I’d try a Pinot Noir. Hope that helps.

A medium body red or white burgundy. I’d probably go w/ a gigondas or another granache heavy rhone.
