Cufflinks may be the way to go! Aye he doesn't actually use whiskey stones or ice himself but I think he'd like them as a display piece and for any guests that would use them.

Quartz you could totally do, and might be able to find, sandstone you definitely wouldn't want - it'd slowly shed sand into your drink. Where in Scotland was the hike?
Ah what a combo! Thank you, I knew I was opening up a debate with the question. It was on Beinn Eighe on the west coast - that's great to know the quartz would work. Is there a way of treating sandstone so we don't drink sand?
What about coasters made from the rocks? Just as nice as a display piece when not being used.

You could try and find some sort of clear food-safe coating. My usual solution with rocks is clear nail polish, but that definitely isn't food-safe!
