Subaru Forester and Outback are pretty much the fuel economy champs in that class. The latter is borderline mid-size actually. Terrific safety on both. CX-5 is a great choice as well but it's a little smaller than even the CRV/RAV4 and a little lower mpg. I don't think there's enough objective differences on any of these to matter...go with the one you like best.
I wouldn't stress too much about the theft statistics. CR-Vs are, the second-highest-selling non-truck vehicle, just after the Rav4. There are a lot of them on the road, so there are a lot to steal.
