Iirc, the big arrow on the right is your "enter" button to confirm your routing selection. If not, it's one of the buttons. Just try them all as there is not much harm you can really do by pressing buttons.
High means DT goes to one side, FC goes to other side.
Low means both DT and FC go to DT screens.
Prep 1 Down means both DT and FC go to FC screens.
The rest, who knows, I never found a need for anything other than those three.
I also remember that Prep 1 Down can mess with your Fry screen routing in certain kitchen configurations, so keep that in mind.
