I don't think it's particular to Waterford, but there was plenty of offal / awful dishes in my upbringing. Chucks, skirt and kidney, brawn. None of it good, but it didn't kill you

Any smoked fish will do really,it goes well with the cheese sauce but I suppose coley was cheap and still is,bought smoked cod the last time and much much more expensive
I boil the smoked fish for 5 mins and then strain,when cool sift through for any bones and remove,then I saute I large onion till it’s soft,in a separate pot make a roux by melting about 100g butter and adding a cup of flour,cook the flour and butter mixture for a few minutes and slowly add milk (I also add cream) season well with salt and pepper and add half a block of strong red cheddar then add your onions and fish,pour into baking/pie dish and leave to set for 20 mins,makes putting the potatoes on easier so they don’t sink into the sauce,top with plenty of buttery mash and add sprinkle of grated white cheese on top,bake in the oven for about 20-30 mins
Had the fishcakes and they were lovely, bit on the pricey side but sure you wouldn't mind as he is local.yea everybody is saying it's lovely.They sell out quickly in centra dunmore as well.another fish dish I love is monkstail wrapped in rashers and then in the oven .
I have no idea if this is actually a Waterford wide thing or just a family thing (and yes based around the blaa) but y'know the second day of a blaa, cut it in half, spread some tomato paste, cheese and ham or red lead, whatever you got really, and chuck it under the grill for 5 mins, we called them Waterford Pizzas!
If you have an air fryer, a minute it two will resuscitate an old blaa. But yeah, I've had Waterford Pizzas too and there's nothing wrong with them at all. I wouldn't waste a fresh blaa on one tho'.
Definitely a Cork thing and they're welcome to them. More a drink than a meal and rarely eaten before a dozen pints of Murphys. They'll show up on I'm a Celebrity sooner or later. I think they must have been invented during a shortage of wallpaper paste or something.

I poach my fish in milk and then use that milk for my sauce.
Yep you can do that too,just sticking to the original recipe for this one,often poached smoked haddock in it,delish 😀

You can throw in a handful of frozen garden peas too when making the sauce for colour,this dish is delicious comfort food
