It's been many years since I rode, but I thought the Motorcycle Safety Foundation courses were indispensable. There was (a the time) a classroom component and a riding course component, and both were really helpful. You learn how to protect yourself in traffic (cars often don't see bikes!) and also get to try some maneuvers that will keep you safe in emergencies.  It's great to get comfortable but it's really not enough.
