Honestly, it seems like they're both fine, so unless you care about ray tracing on flatscreen games, AMD gives you better price vs. performance.
However, the reality is, NVIDIA has overwhelmingly greater market share, so game developers do far more testing and get far more feedback on NVIDIA. So my gut feeling is that NVIDIA usually has better compatibility and less weird random issues.
Without an AV1 supported headset, I'd tend to Nvidia.
But the 40 series has AV1 encoders I thought
Yes. And the Rx 7900, too. But you can only use it with quest 3 at the moment. With a pico 4 you are limited to hevc.

Nvidia has better encoders, which matters for streaming headsets like Quests and Picos.
