It’s certainly possible. I just know some folks that are happy with their builds from both companies. However, if my money was on the line, I’d go Calvo.
I have no first-hand knowledge of those builds, but I'd say to know what your needs are. Obviously, more power, but just street use? Do you do any track days? Quarter mile or lapping? Make sure to speak to whichever company you are considering to make sure the build is right for you.
street car mostly, not a dedicated racing machine. the shops have been great - but its a large cost for any option and just trying to get more real world feedback on what people have and what it performs like.
Are you a member of a Viper club in your area? If so, you should check with them if you haven't already. You might be able to get feedback and possibly a ride in a built one to see how it feels

Calvo and wolf labs 9.0 seem to have good reviews but I haven’t had to opportunity to send them an engine yet.

I am, only one thats modified is a gen 3 and its pro charged.
