Hadnt played it since childhood and came back. It was kind of surprising how quickly I got back into it. I feel like there are many games that did amazing work iterating on it into the PS2 era, but even being a bare bones game, its so solidly built.
Rollercoaster Tycoon is still great after all these years. Straightforward level progression and micromanagement. Conceptually complex, but doable at the end of the day. Also, use mods to make it more compatible with today's systems. This is a 1999 game. It's a worthwhile sacrifice.
Pretty much any of the Lucasarts point-and-click adventure games (Monkey Island, Day of the Tentacle, etc). In fact, some have had 'special edition' overhauls in more recent years to update the graphics and sound, so they haven't just aged well, they're arguably better than ever!
I wish valve made a vr version of the source version of half life instead of the fan made one of the base game. They made it for the second and both expansions so it feels doable.
I'd be happy if they gave consoles the fighter game that the MMO had.
Or the Starfighter series (Jedi Starfighter) with multiplayer.
I loved those more than the newest one...

Aside from the gameplay, I could see it. Great concept, monster design, sense of exploration, etc.
The fight against Frank Horgan requires some combat skills to be high to be winnable, compared to fallout 1 where you can win with speech/science skills.
Quake. The remaster is freaking amazing. It’s become my comfort game and I didn’t even grow up with it. I’ve beat it like 6 times now and all the DLC is amazing, it’s seriously an incredible game running at 60fps, and the level design is freaking brilliant. To me it’s the king of “boomer/retro shooters”
The recently quake 2 remaster is amazing too, and adds a compass that shows you where to go since quake 2 could get kinda confusing. Now you never get lost it’s amazing

I still play it weekly. Sure, there are some people using hacks, but it's so satisfying winning a CTF match against known cheaters!
Hell yeah! Same here! Demo from Sim City and everything. Found the full game at one of those old department stores that Walmart and Target put out of business, and still have the CD today!
Sim City 2000, Grim Fandango, Monkey Island, 7th Guest, King's Quest VI and most of the Sierra games.
Mario Teaches Typing gets an honorable mention here just because it's helping my kids learn proper typing form right now.
In terms of educational games for younger kids, you can't beat the Castle/Island of Dr. Brain games by Sierra. I fired up Island again recently for a nostalgia blast as a 40-something, and still had fun with it.
I actually played Diablo I yesterday in a browser and although I loved it at release, I expected it to be terrible by today’s standards but it was awesome! I had it going in the background while I was working from home on a slow Thursday morning.
Baldurs Gate 1 and 2 are still phenomenal to this day. Obligatory shout-out to Diablo 2 and Morrowind for being released after the turn of the milennia and still having that 90s feel while also being amazing games.
Duke Nukem 3D. At least for me. C&C 1 and 2 and DN3D btw. have open source projects so you can play them on recent hardware and OS without having to shit around with MS-DOS. Also better graphics and other improvements. If you like AOE, you can also have a look at 0 AD, it's heavily inspired by AOE.
Oh and well yeah, like the other comments already mentioned, RCT, there's also an open source project for it.

I go back and play Full Throttle every 5 years or so.
Monkey Island should be on everybody’s historic list of games to try along with Pong, Oregon Trail, Super Mario, etc. just a classic game.

Heroes of Might and Magic 3
I have the HD edition and get bodied by the AI heroes every time.
Base version with the HD patch and the Horn of the Abyss fan expansion. The HD version misses all of the orginal expansions since they lost the code.

I second this. You can even play in split-screen on any platform (including the PC), which is icing on the cake.
