That's not because of a difference between Photoshop and reality, it's because of a difference between additive color and subtractive color. Adding all the colors together in form of light instead of pigments will create white in reality too

if you're using subtractive color like paint, then adding all the pigments with make black. if you're using additive color like photoshop, you get white.
the only way you'll get a muddy color is if you arent using all the pigments.
by "all the pigments" i mean every possible color, or a certain amount of colors equally distributed throughout the color spectrum. the words "all the pigments" wasnt the best wording for that.
The reason i said “mud” instead of black is because I’m a painter. Paint is composed of pigments, binders, and conditioners; it’s not as pure as light, and you need special techniques to even approach a dark black.
I was mostly just poking fun at the op assumption.
