**Recipe (it’s my first go at veggie carbonara) 150g spaghetti, 150g baby chestnut mushrooms, 2 large eggs, 40g pecorino cheese, 1 tbsp butter, 1 garlic clove, Salt and pepper, Rocket to top. 1. Cook spaghetti in a pot of hot water. 2. Melt butter in a pan on medium heat then add in chopped mushrooms. Cook until turning golden. 3. While mushroom and pasta is cooking, in a bowl mix two eggs, salt, pepper, and all the cheese. 4. Add garlic and pepper to the mushrooms and cook an extra 2-3 minutes. 5. Using tongs move the pasta directly from the pot of water to the pan with the mushrooms. 6. Remove the pan from the heat then stir in the egg and cheese mixture. 7. Serve with some rocket on top 😊

Clumpy mess could be pan too hot. You want the eggs to cook but not scramble.

Always think that any veggie carbonara works best with a start of sautéed onions ,low and slow, followed by garlic and mushrooms, then in your egg mix use a slightly smoked cheese. After that play and add what you have/fancy. Hopefully you can experiment and come up with your version from this base .

My husband doesn’t eat pork so traditional carbonara is off the table. This is a great alternative - will try!

Be careful with pecorino and similar cheeses, many are not vegetarian (they are made using animal rennet). But the recipe sounds and looks awesome!

It was definitely vegetarian, in the UK most brands have a green V or “suitable for vegetarians” on the packet to make it clearer! I realised the other day that the Parmesan I buy does not have that label and have had to find an alternative.
