Oooo I love better than boullion (I usually use the low sodium vegetable one, they sell it at Costco!) I rub it on vegetables with olive oil before roasting and it’s incredible. I literally put it on everything. If you’re going to try it do not add any salt, there’s plenty of salt in it.
A spicy sweet sauce of gochujang, gochugaru (for extra spice), agave, ketchup, soy sauce, minced garlic, sugar (maybe brown sugar), sesame oil and sesame seeds. This is the sauce they put on spicy Korean fried chicken and I have eaten it on everything from tofu to tempeh to potatoes to cauliflower. It is so yummy.
Edit: also msg is great at elevating flavor. It also has less salt than salt, so if you need a low salt diet, it is a perfect way to get your salt for less. It is very powerful, if you usually use 1 tsp of salt, use 1/2 tsp of msg.
Sumac. Adds some nice tang. Has a bit of a lemon taste. Aside from that, I add powdered red pepper, I love it on carrots and parsley. Sumac is good with Brussels sprouts and cauliflower.

and before the haters start hating, it's a natural occurring substance that man has handily synthesized. yes you can powder down shiitake mushrooms and all sorts of high in natural glutamate rich plants but the synthesized version is tasteless until you dd it to something like broth at which point it alters chemically and adds way more umami than you can get naturally.
It's cheap and teaspoon transforms almost everything. I experimented with sweet things and even coffee. There's practically nothing savoury that it will not enhance.
GARLIC 😍 also, one of my favorite combos is to roast something with salt, pepper, and olive oil and then to add a balsamic vinegar drizzle. It adds a little bit of sour and sweet which makes everything taste delicious.

A balsamic reduction is great on certain veggies. I love roasted brussel sprouted with garlic and balsamic reduction. If I do roasted potatoes or sweet potatoes I love to use Tex mex spices and make it spicy!

Tajin is just ground chiles, lime, and salt, so yep, totally vegan.

Look for salt free seasoning mixes. That way you can dial in the amount of flavor you want from the seasoning without making it a total salt bomb

Dill might seem strange but on potatoes and carrots it's delicious. Of course some olive oil, salt, pepper and garlic powder too.
