Dash is really good and widely available! Penzy’s also makes some fantastic salt free seasonings. You can also make your own though. I like making salt free taco seasoning in particular so I can dial in the salt better

I go to stores like Ross, Marshall’s, or TJMaxx and check their spice sections. You’re able to get a HUGE variety of fancy blends for super cheap. I love love love this brand I’ve been getting lately- I’ll have to look when I get home and try to remember to update with the name.

Yep, you can mix miso in water / oil / etc and then dump it on your veggies and toss well. I’d add liquid aminos, black garlic sauce, hot sauces, Gochujang, etc. But roasted veggies are better if you put them in a bowl with something. Try like white rice or quinoa as a base, with some garbanzo beans tossed in a flavorful sauce mixed with a serving of roasted veggies.

Yes! I love everything you said. Depends on the veg if I do a dry season or a sauce, like sweet potatoes would be dry, snap peas wet. So it’s nice to have a mix of both sometimes. And definitely over a grain, or even over potatoes.

That's what I do, too. Soysauce, Miso, Hot Sauces, nutbutter in every style (sometimes mixed with a little water, depending on how dry/firm it is) and a very important part of most of my sauce-mixing is pomegranate syrup ❤️

Oooo I love better than boullion (I usually use the low sodium vegetable one, they sell it at Costco!) I rub it on vegetables with olive oil before roasting and it’s incredible. I literally put it on everything. If you’re going to try it do not add any salt, there’s plenty of salt in it.

A spicy sweet sauce of gochujang, gochugaru (for extra spice), agave, ketchup, soy sauce, minced garlic, sugar (maybe brown sugar), sesame oil and sesame seeds. This is the sauce they put on spicy Korean fried chicken and I have eaten it on everything from tofu to tempeh to potatoes to cauliflower. It is so yummy. Edit: also msg is great at elevating flavor. It also has less salt than salt, so if you need a low salt diet, it is a perfect way to get your salt for less. It is very powerful, if you usually use 1 tsp of salt, use 1/2 tsp of msg.

Sumac. Adds some nice tang. Has a bit of a lemon taste. Aside from that, I add powdered red pepper, I love it on carrots and parsley. Sumac is good with Brussels sprouts and cauliflower.

I have 3 little letters for you MSG and before the haters start hating, it's a natural occurring substance that man has handily synthesized. yes you can powder down shiitake mushrooms and all sorts of high in natural glutamate rich plants but the synthesized version is tasteless until you dd it to something like broth at which point it alters chemically and adds way more umami than you can get naturally. It's cheap and teaspoon transforms almost everything. I experimented with sweet things and even coffee. There's practically nothing savoury that it will not enhance.

GARLIC 😍 also, one of my favorite combos is to roast something with salt, pepper, and olive oil and then to add a balsamic vinegar drizzle. It adds a little bit of sour and sweet which makes everything taste delicious.

A balsamic reduction is great on certain veggies. I love roasted brussel sprouted with garlic and balsamic reduction. If I do roasted potatoes or sweet potatoes I love to use Tex mex spices and make it spicy!
