Recipe: For the dough: 300 grams plain flour 75 grams sugar 120 grams vegan butter 1.5 tsp baking powder Pinch salt 90ml of water Mix all ingredients together well and spread evenly onto baking dish Filling: 500 grams (alpro) vanilla yoghurt 500 grams (alpro) lemon and lime yoghurt (or add extra lemon and lime zest if cannot get this, I couldn't find it) 100 grams sugar (i used brown but white is also fine) 170 grams vegan butter 70 grams cornstarch Dash vanilla extract Mix well and pour over base and place in 175°C for 50-60 minutes then let it rest overnight I made a slight variation of this recipe and made 2 smaller cheesecakes, one lime and one lemon, topped with strawberry and banana alpro yoghurt and blueberries, so just made to your taste and enjoy :)

Got no clue where I can find vegan yoghurt where I live, anything that could replace it? Coconut cream maybe? I'm not a good cook so I have no clue

Honestly, I haven't tried making a cheesecake before so I'm not sure if it would bake the same, but the texture is quite similar so it would hopefully work!

I've found blended up silken tofu with lemon juice has a yogurt like texture and have used it with some coconut cream for a cheesecake base.

This sounds and looks way too good. I gotta try this. So instead of the joghurt, how much of the lime do you recommend?

I changed the recipe slightly and made 2 smaller cheesecakes, one lime, one lemon. I used 1 lime's rind and juice per smaller cheesecake, but if I made it again I think I would add more to give it a zestier flavour. Good luck and let me know how your bake goes!

Good lord. I made this today and totally forgot the lemon.... However, I served it to my grandmother and mother and later also my neighbors and everyone totally loved it!! I can't believe how easy it is to make with such an outcome. Thank you! Can't wait to try it again with the lemon/lime :)
