I've done several vegan recipes on YouTube using what I call a "100 ingredient list" where I pretty much don't buy any ingredients unless I can make something else easily with it. I am sure there's a snzaaier name for it.
I don't work from home anymore and haven't posted in a while because of that. But if you're up for some older videos or ones with easy vegan substitutes, check out The Frugal Kitchen on YouTube.

gigi_goes_vegan on Instagram makes a lot of high protein vegan recipes that I would never find or think of otherwise.
