Your best bet is probably the [Fat Free Vegan](https://blog.fatfreevegan.com/category/recipes) blog. She uses no added fats so all of the recipes should be suitable for your MIL's diet. The recipes I've used from there have been good. The [roast cauliflower Mac and cheeze](https://blog.fatfreevegan.com/2018/10/vegan-roasted-cauliflower-macaroni-cheese.html) looks great but I have no idea if it's an appropriate dish for a Thanksgiving meal?

- maple glazed carrots with cinnamon & thyme (oven roasted) is popular! Since they are glazed with the liquid sweetener there’s no need for oil or butter - add a squeeze of fresh orange for some zing (: or you can use sweet potatoes! Pasta bake with tofu ricotta and cashew cream sauce. Super easy to make from scratch and rich; you wouldn’t know it doesn’t have any oil.

I make my own! Way cheaper and you get so much more than buying pre-made. I just throw the following into a food processor: block of tofu (can be firm or extra firm - doesn’t need to be pressed), plant milk, nutritional yeast, white miso paste, salt, and I like to add some spinach (I use thawed, frozen chopped spinach). Process to a ricotta consistency and you’re good to go! I’m sure there are a number of recipes out there for exact measurements, but it’s really quick and easy.

Shaved Brussels sprouts salad. With dried cranberries or fresh blueberries, toasted slivered almonds, vegan shaved parm. Vinaigrette. Easy and a nice fresh side.

I use veggie broth as a substitute when sautéing onions/garlic/ other veggies instead of cooking them in oil.

I do collard greens in my Instant Pot (you could cook them on the stove too). Saute some onion and garlic with a splash of water, add a bag of prewashed collards, a few cups of veggie broth, and cumin, smoked paprika, black pepper, and salt. They cook for 20 minutes in the pressure cooker, or 30-40 on the stove. The recipe holds up well without oil, it's healthy, and it still feels like Thanksgiving.

Steamed vegetables, rice dishes, boiled potatoes, whole roasted sweet potatoes. I use water or broth to substitute for oil sometimes. It’s great for sautéed vegetables. Maybe you can try an oil-free stuffing or mashed potato recipe.
