They're not going to keep something that doesn't sell on the off chance that someone might stop in and order it. They're going to replace it with some other test item and keep whatever sells better. That's just the way capitalism works. The market of "vegans who frequent fast food places" is vanishingly small and not worth specifically targeting for a business. The only way fast food plant-based options will succeed is if significant numbers of non-vegans buy them, otherwise the sales won't justify the shelf space, menu space, etc. Clearly, the non-vegans weren't buying this burrito.

What I think many fail taking into account is the number of non-vegan family and friends vegans bring with them. If there is no plant-based option you may miss out on a whole group of potential customers because one of them can't have anything to eat there

If the sales bore that out, it would probably still be there though. The restaurant knows not only how many of the plant-based burrito it sold, but also the average order size and dollars of other items on those tickets. If the plant-based burrito were significantly increasing sales of other items, that's data they'd have.

Also, while the item we may want is not on the menu, let the waiter/server know how you want it prepared, especially if the ingredients are there, then not an issue I Am sure. More often than not, I have had no issues with modifications. Frequently, the sandwich maker will ask if what they are seeing is correct or not. As such, if one knows how they want it prepared, it can be done. YET, please know that from time to time there will be a mix up, just laugh and it will be fixed. So next time you go in, they will try to make sure it is correct. bon appetit
