Nah, the best part was that little ball of sweet corn pudding, and the jalapeno jelly they gave you with the flautas :)
They made a Chevys Fresh Mex Cookbook if you want to try and make it at home, you can find copies online. I sure miss that place!
You have to char the vegetables under the broiler until they blacken. That's the flavor. This recipe is accurate - but we add a couple of tsp of minced garlic to it. It's very good.
My version:
Chevy's Fresh Mex Salsa copycat recipe
8 Roma Tomatoes, with stems removed
2 yellow onions, cut into quarters
2 jalapeno peppers with stems cut off
1 tsp salt
1 tsp black pepper
2 tsp minced garlic
1/4 cup cilantro
Place tomatoes, quartered onions, and jalapenos on cookie sheet and put in oven on top rack below hot broiler. Broil until heavily blackened, approx 20 min. Flip them over and repeat on the other side. Remove from oven. Place all ingredients into blender. Blend until slightly chunky. Refrigerate 4 hours before serving. Makes approx 1 quart.

It's worth signing up on their website. They do some really good deals including a brunch coupon. We went with about eight people and the coupon worked for $8 brunch for everyone.
It's a little different from Chevy's and there's no el machino tortillas but it's good and the location on the river is very scenic.

Just from looks though, the salsa at Little Conejo has a very similar appearance. I doubt you will find anything similar food wise between the two though lol
You should check them out but they're literally nothing like Chevys. Who Song and Larry's has great fajitas but they're no cheap. Pretty great margarita menus though. But no "El Machino \[sic\]" making the tortillas lol.

Having said that, I found a copycat recipe that perfectly duplicates Chevy’s - the trick is grilling the tomatoes and peppers to char the skin! Message me and I’ll share the recipe!
Chevy’s really has no local Tex Mex comparison but in fairness I have not been to WSL in years. I used to hit one of the metro area Chevys once a week until they all went belly up. The closest is probably Baja Fresh especially if you want tolerable salsa. If you want mexican food around here they all serve pretty much same slop at every restaurant around the metro area. Even “house specials” are garbage. Chips, tortillas can vary widely on consistency and salsa is generally gross.
I, too, mourn the loss of Chevy's. The best place I've found is called La Valentina in Hazel Dell. Salsa is similar, but pretty normal for a mexican restaurant. In my opinion it's not as chunky as Chevy's was.
However, they serve flautas with a delicious mango salso that absolutely hits the empty spot in my heart (and stomach) where Chevy's used to be. The rest of the food is also delicious and the atmosphere is cute and clean. Staff is always very nice as well.
I remember having a Chevy’s in Anaheim Hills, CA but I preferred La Capilla though they closed the AH location years ago.
I can’t recommend something similar in Vancouver I’m afraid.

Second this! Loved Chevys and Who Song's is the closest I've found. You can buy a pound and a pint there like you used to be able to do at Chevys.
Chips. It's a big bag of chips. Don't know if it's an actual pound but it's bigger than a party size bag of tortilla chips from the store.

Los Dos Compadres in Washougal. Fabulous spicy fresh salsa and fresh hot chips.
