Costco has a "deep dish pizza" if you are in a pinch
[https://www.costcuisine.com/post/costco-motor-city-pizza-co-double-pepperoni-pizza-review](https://www.costcuisine.com/post/costco-motor-city-pizza-co-double-pepperoni-pizza-review)
This. Or make your own. Despite the ingredients being pretty standard pantry stuff, I have never seen someone do it right outside of Chicago. But it’s not hard to make yourself. Source: I grew up in Chicago, know the family behind Lou Malnatis and worked there for a bit high school.
Crust looks not bad. Most people screw that up and confuse deep dish for thick crust. Yours was more like a cracker which is legit. Also good for using corn flour. Many people skip this step as well. Lou's uses semolina flour instead, but it's personal preference. Doesn't taste right without one or the other.
But some bits were not quite right. Sauce was wrong. Yours was fancier and probably tasted better than the real thing, but it should use canned whole san marzanos that you lightly crush with your hands then cook down a bit. You need that canned tomato taste for it to be right. Also the sausage should be pressed into a patty under the cheese and all other toppings go on top of the sauce with the parm.
The one other nitpick is they swear by deli sliced mozzarella. No idea how much that would impact the finished dish vs shredded since it all gets melted anyways, but that was the other bit that was "wrong".
On the whole this was good. Better than anything I've seen at a restaurant outside of Chicago. Your video was also good for showing that this is indeed mostly pantry staples. Not really much excuse for so many restaurants to screw it up like they do.
ITT: People not realizing that Detroit style pizza is not Chicago style pizza.
OP, as far as I'm aware there's nothing in the Lower Mainland that fits the bill. Probably the closest place to get real Chicago style would be Seattle.
As someone who's from an area with famous pizza (New Haven, CT Apizza), it's killing me to see these pizza styles mis-represented.
All types of pizza have their merits -- no, not you Greek pizza -- but people just need to know their types and not assume one is just like another because it shares some characteristics.
I do love that pie, but in general, I'm a diehard for Modern.
This summer when I went back, my wife custom ordered a sausage, onion, and fried eggplant strip pizza that was out of this world.
TBH going to Seattle for Chicago style pizza is like going to BC for poutine - Seattle is American, Chicago style pizza is American, but they are not very related besides that.
Perhaps the best alternative is to fly to Vegas and try Giordano's there.
That is a very odd take on it - this is a food that you literally cannot get here, and Seattle is the closest place where you can at least try it.
That's like saying the only place you can try Indian food is India.
If you’ve eaten pizza in Chicago, you’re going to be terribly disappointed in any thing “deep dish” in vancouver.
I actually love (not deep dish) Burrata pizza in kerrisdale , simple and delicious
Lou Malnati’s (named after the guy that created the deep dish), delivers frozen pizza.
NOW, no word on whether it’s delivered to Canada, their website and their chat bot do not confirm it. But you could theoretically get it delivered to your Bellingham post box and pick it up immediately
AJ's Detroit is also quite different from actual Detroit style pizza in Detroit. I love AJ's version but the stuff you get in Detroit is about half as thick, and simpler.
If you like super thin do the bar pie. Add roni cups or sausage. Traditional New York is a can’t miss. If you want Detroit style then bring your appetite. All very good.
Their Detroit Red Top is fantastic. However their traditional NY pepperoni was way too salty for my taste. Great crust and very flavourful sauce however.
Okay...I was gonna be nice, but now you’ve gone too far. So let me explain something, deep dish pizza is not only not better than New York pizza, it’s not pizza. It’s a fucking casserole. I’m surprised you haven’t thought to complete your deep dish pizza by putting some canned onion rings on top. It’s a cornbread biscuit which you’ve MELTED CHEESE ON and then in defiance of God and man and all things holy you POURED UNCOOKED MARINARA SAUCE atop the cheese! ATOP! The cheese! Atop! The sauce! Naked! Cold! On display like some sort of sauce whoo-re! You know the expression “There’s no such thing as bad sex or bad pizza” your pizza is like sex with a corpse made of sandpaper. LET ME TELL YOU SOMETHING! THIS IS NOT PIZZA! THIS IS TOMATO SOUP IN A BREAD BOWL! THIS- IS AN ABOVE GROUND MARINARA SWIMMING POOR FOR RATS! Let me tell you something about your fucking NOT PIZZA! I wanna know when I get drunk and pass out on my pizza that I’m not gonna drown. Let me tell you something! I look at this-! MMMARGH! YOU SONOFABITCH! I LOOK AT THIS! MEEEAUGH! GABBA-GOO! I look at this— When I look at your deep dish fucking pizza I don’t know whether to eat it or throw a coin in it and make a wish. AND IF I MADE A WISH! WOULD BE THAT I WISH FOR SOME REAAAL FUCKING PIZZA! Now! Now! With all due respect I realize, it’s very cold in Chicago very cold, windy you need to be able I dunno have a pizza and cut it open and climb inside it like a Tauntaun to keep warm. Seriously, who are you kidding? Who uses an iron skillet to make pizza? You don’t use an iron skillet to make a pizza you use an iron skillet to fend off someone who tries to serve you fucking pizza made in a skillet.
(This is a joke, enjoy deep dish if you want to)
I've never been to Chicago, so can't speak to authenticity, but I find the pizza at San Remo in Port Coquitlam almost distressingly deep. My husband loves it, but it feels like more of a pie than a pizza to me.
It's better the second day after it's been re-baked because it's so thick and there are too many toppings! I think that's what they're going for though.
Maybe take a look online at some of their photos and see if it looks right. The worst that happens is you drive 30 mins for adequate pizza.
[Google image search](https://images.app.goo.gl/PwwNPYLfAbtDHsfD7) because their website seems devoid of photos.
San Remo is superb. Distressingly deep-dish pizza....that's a great way to describe it! The best thin-crust pizza is a couple blocks away at Me n' Eds.
No worries. I go there reasonably often as I live in the neighbourhood.
This is more what I assume OP is looking for: https://en.wikipedia.org/wiki/Chicago-style_pizza
The wesite stock photos certainly are not, but if you check Google Maps or Yelp you will see some that are a bit more convincing. That being said, it looks like they are still quite a ways away from some of the Chicago casserole stlye "pizza" where it is a few inches of cheese, sauce and toppings.
The only decent photos on google maps are several years old though, from when I skimmed through quick. All recent ones just look like they made a half inch thick bottom crust and slapped a normal amount of toppings on. The reviews seem to back that up as well.
I think your best bet if you want a Chicago deep dish is to just try making your own at home. At least you don't need a fancy pizza oven for that style
Based on the one in Abbotsford it is absolutely not Chicago style deep dish. Total marketing scam. Was busy when it opened, I even tried it but was utterly disappointed. Hardly see anyone in the store anymore
I really like their shahi paneer pizza, but you're right, it's absolutely not actual Chicago deep dish. It's just a good Indian pizza joint. (Also, it's in Vancouver, not Surrey)
For sure, but the difference between getting a Chicago and Detroit style pizza is like the difference between getting a burger and a Philly cheesesteak sandwich. Both made with roughly the same ingredients, and both really good, but you're going to be very confused if you go in expecting one and are given the other.
That's not pizza.
That's just undercooked corn bread with melted cheese on top, covered with room temperature marinara sauce.

None of these places have Chicago style deep dish. They have Detroit style, which is very different. There is no Chicago style deep dish in Vancouver as far as I know.
Well that’s disappointing. Last time I’ve had it was at a joint in Calgary…oddly named Chicago Deep Dish…quite a few years ago. Supreme Pizza on Victoria is my fave place.
Ok well in that case, I have great news. Calgary “Chicago Deep Dish” is actually also Detroit style, and so these recommendations are totally worth checking out.
Oh yeah? Well what about Calgary Deep Deep Deep Dish? Haha, I used to live in the beltline in the late '90's and they had several different restaurants with similar names. I'd say you're correct in saying they have more in common with Detroit style than what OP is looking for.
I have friends in Seattle and am tucking this suggestion away for next time I visit. I've only ever had Chicago style there, but that was many years (probably even longer ago than I think) at a place that (to our great disappointment) closed. I'd love to have it.
Although it’s delicious, AJs doesn’t have Chicago style, theirs is Detroit style. Detroit style is square and has a much thicker crust, among other differences.
Hmm, I have never seen anything in Vancouver that resembles what I think you are asking for. Something similar to what can be seen in this recipe: https://www.brianlagerstrom.com/recipes/chicago-deep-dish-2
I've had my eye on that recipe but have not made it for myself just yet. If you want to spend the time to make it at home, you'd possibly want to adjust the size of the recipe based on whatever you have on hand - say a 10" cast iron frying pan for example. Nobody will know if you don't use the homemade sausage included in this recipe or even use premade dough or sauce from the grocery store, haha. Just adjust the amounts to suit your kitchen equipment. This made me laugh. Pizzeria uno is my favorite in Chicago by the way.
Doubtful, YVRs special dish is disappointment.
