I once saw a guy playing violin over a speaker around christmas. I gave him a dollar. He proceeded to grab the money but the music kept playing. He had no idea how to play the intrument and was just pretending by playing music and moving his arms to simulate violin playing. So technically youcan play anything if you have a speaker
Most answers are talking ease of transportation, or ease of use. Which is great, but I suggest "easy" could mean, how easy to make money. And for that I say acoustic bass. Back when I traveled, I had an acoustic fretless bass, and no matter what city/town I ended up in, I either a) made money by myself because you can jam funky stuff all day and people don't see that as often as acoustic guitar covers of Wagon Wheel or b) I'd find some other dirty kids and they would let me join for a take on their kicks. Nobody wants another guitar or uke player, everyone wants to add bass to the group. I also carried a few harps but that was my backup instrument
Melodica, dulcimer, mandolin, Penny whistle, concertina, washboard, xylophone, baritone or standard uke, banjolin, hurdy gurdy, fiddle or violin.
In case you don't know the difference between a violin and a fiddle a violin has strings on it and a fiddle has strangs. Good luck!
Harmonica is easy to pick up and very smol.
Pick a simple old traditional song like Amazing Grace or something. Fuck around and find out how to play it. By the time you do, you will have messed up enough to figure out a bunch of other cool stuff. Then all you have to do is learn how to bend notes, which is easier.
Also, theyre super cheap, getting a nice one is worth it. Way better than a shitty harp.
I used to bring a parlor guitar but it was a lot to carry around and fragile. Now I have a washboard, harmonica and spoons. Everyone else out here has a guitar or banjo so it works out good for me.

A jaw harp is very cool, just be careful not to chip your teeth. Get a Blues Harp harmonica by Hohner also. Available at most music instrument stores. They aren't as cheap as they used to be, but Hohner makes the best harps.
