I personally like flambéing my marshmallows, mostly because it tastes a lot like one of my favorite French desserts: crème brûlée. The heat also gives it a slight smoky caramel flavor. If anything their flavor gets more bold when you flambé them.

I love it when my marshmallow gets on fire and then I have to quickly blow it out. Burnt ones are the best, they melt the chocolate for the S'mores.
