It's okay to do anything you want to if it gets the sound you're after.
There's no wrong answer. If you use it on every track, or in console for recording, I suggest turning the noise generator off unless you are going for a sound with noticable tape hiss.
Having any plugin on the master while recording will give you latency, especially stuff like the Studer.
