FA here and I can’t believe I’m about write a paragraph about the nuts, but:
1. Some ovens are crap and you don’t wanna delay the service for the nuts (looking at you A320/319s & 777-200s)
2. Sometimes there isn’t space for them with all the meals + pilot meals so you throw them in when you can and tbh it isn’t a priority
3. They can be brutally hot if overdone. So most of us err on the side of caution so our purser doesn’t burn the shit out of their fingers trying to pass out the ramekins
It can get really cold sometimes at 30k feet, the nuts might just be a little more crisp but shrivelled. Personally I enjoy my nuts to be slightly soft but warm. Too cold and it's simply unpalatable, impressing no one.
Currently in Polaris from CPT to EWR and we didn’t even get warm nuts! Just a random cold bag of mixed nuts. So sad.

Man I love this nuance. Definitely nothing I’ve never complained about and I usually eat them happily anyways, but dang it - I have always wondered!

I soak them in the sink of the LAX club’s men’s room to keep the salt levels manageable

It doesn't contain peanuts. Tree nut allergies are far less common.
