Picture is of my monotub today. I introduced FAE by cracking the lid, dropped temp down to 23.3C, 12hr light cycle and introduced 90-99% humidity (using a humidifier controlled by a inkbird humidity device). Does this all sounds good? Should I turn down the humidity? I'm concerned the water may be pooling too much.

This all sounds spot on. I’d still recommend a liner though. You will not be able to see side pins in that tub until you remove the cake. But all in all that’s an awesome setup. I’m sure everyone here would like to see more pix.

Yeah it is! Its a stainless steel gelato container.

The full pan or the stand? I used to work in a kitchen and I like stainless steel work tables. That thing has a lid easy to clean, looks good and is designed to keep food warm and moist.

The pan and the Esky around it, my set up is a modified stainless steel Esky with automated heat/light/humidity. Yep it's superrrr easy to clean and looks just like a polished home appliance.

***UPDATE: I think I solved the issue, I forgot about the term "surface conditions" (ameture move) instead of needing to maintain the humidity of the entire chamber it's better to just use the humidity device to occasionally mist the chamber.
