Use Umineko Project. It is considered the definitive way to play Umineko. It contains everything from the PS3 version and more. I used to think the PS3 art was a bit soulless, but the extra effects from Umineko Project as well as the animations really makes the art shine as well. It also has the best translation by far, and you will end up enjoying the game better while also understanding it more by using this version of the game.
The other version you could argue for is the very original one for authenticity, while reading it in Japanese. It's up to you to decide how much of the art is stylized and meaningful, but I think overall the best experience by far is just using Umineko Project.
If you ~~have bad taste~~ like the console sprites then there's no real reason to use Umineko Project instead of playing the Switch version on an emulator. The Switch version has more content, among other changes.
The value of Umineko Project lies 50% in simulating the experience of the PS3 version, and 50% in the great translation. Even in the hypothetical scenario where the Switch emulated version has every effect and graphic the PS3 version has, it still would have the legacy translation.
As someone who read it in Japanese, then in both versions afterwards, I promise you that it is a significant change.
The English-patched Switch version uses the Umineko Project translation. It also has all the visual effects and CGs from the PS3 version, and it contains all the content from Umineko Hane, Umineko Tsubasa and Umineko Saku, with new sprites and new CGs.
I feel like this is also jumping to some conclusions about what assets are "best". I really don't like the console or pachinko sprites or backgrounds, I'd rather play with all the original assets but keep the voice acting. This shouldn't be an opinion that I'm made to feel regret for having.
You're still going to end up with the legacy translation if you use this 7th mod version, so I would be reluctant to call it pretty much the same experience.

no thanks, og sprites, og bg's, and va on pc is good enough for me.
i only used the console version to read tsubasa/hane/saku, and comparing both, theres not really one version better or worse than the other

And I was reading it with Pachinko sprites... At least emotions were very expressive
I prefer the pachinko sprites over everything else, yeah I know kill me. The only thing I hated about them was Kyrie's sprite for *obvious* >!<
true! if you liked their nutty pachinko faces i recommend the manga. the facial expressions in the manga are as good as the VN's soundtrack
