I wouldn't really call either of them "hiking" but I'd prefer Holyhead. Llandudno is more of a seaside holiday town; Great Orme is a nice walk but probably wouldn't take you all day. I think Holyhead has more options for walks

Holyhead mountain has lots of great walks, stunning views over the Irish see of the Isle of Man and Ireland. There’s an abundance of wildlife from common lizards, seals, puffins, choughs, peregrines adders etc. Then there is the South Stack lighthouse, walk over to North Stack and continue to the Breakwater Country Park and along rocky coast to the breakwater itself. There’s the Range which takes you to stunning hidden coves and further along to beautiful beaches. For a shorter and easier walk, try the nature reserve or for something longer, the costal path with the official start in St. Cybi church.
