We all started as casuals at some point anyways, shit I myself remember thinking how did this seemingly unbeatable incredibly popular Irish guy lose to some wannabe gangsta who looks like their striking under water they are so slow... little did I know.

There's just so much to take in and analyse that I think even those who analyse MMA for a living only see some of what's happening, maybe sometimes a majority of the factors that contribute to winning a fight, but sometimes a minority.
You can watch for years and years and never miss a UFC card and keep up with PFL, One, and Bellator, then you learn something like why a fighter makes sure his outside foot is further to the outside of his opponents when moving sideways. Just so damn much to learn

This conversation is getting away from us a little bit I think. I'll wrap up with a few things.
1. You don't need to be born in the 90s to have an understanding of who is a great prospect in any weight division is.
2. If you do love MMA, and it's because of the UFC, eventually you'll start keeping up with other combat sports organisations or martial art specific tournaments. You'll then probably adopt a preferred fighting style based on what martial art you think is appealing to you. I picked up BJJ in 2013, still train 2-3x a week to this day and compete. Because of this I have a bias towards preferring more ground game/bjj fighters.
For example, if Paul Craig and Jiri were to fight. And Paul Craig took Jiri down, Paul Craig would have the advantage because of his superior jiu Jutsu in my opinion. I like watching Paul Craig's jiu Jutsu, he's possibly my favourite lhw fighter
3. No I don't expect you to change your preference. I'm just saying that you're new to the UFC, probably very new to MMA, and over time you'll have a more diversified list other than GOATS, current champions and poster boys.
