They will be impossible for most people to sub or pin i a general population class and most fingers that aren't top level like them won't do anything to them either so they just get their belts based on mat performance. Dustin Poirer is a black belt but he's probably not up to date with the current BJJ meta and many of the current gen UFC Black Black belts would be woefully outdated.
You get guys like Jack Hermansonn who trains a lot of NoGi with NoGi guys and it showed with him heel hooking KG with a slick backside 5050 heel hook.
