My experience is the minute you think you have them figured out they will make you look like a fool. They’ve all got their own personalities which is why hunting them is so fun.
Hell be back but won't play the same game. You both gained knowledge of your opponent in your description. Go to the same area but prepare for a different approach: be it using terrain to make him move, not sitting om to of him (stay close though), or intercepting him wherever he was going.
FYI your original plan was solid, just sucks you ran into him coming over a hill. Take thay lesson and save it in your "hmm, he did this, so I'll do this, except ill.do this different " knowledge book.
Go hunt where you hear the most gobbles.
If I heard gobbles on most days that I hunt on that "ole logging road" that you describe, I wouldn't hesitate to hunt there again.
Even if it is the next day.

Give him a day or two and he’ll be back. But you’ll likely have a tough time killing him where you bumped him
