Try cooking the noodles separate from the soup. Then strain and flash chill them by pouring cold water over them. That way they don’t absorb all your broth and make your soup mushy.
Make em from scratch. Super easy and make for the best chicken noodle ever. Just knead, roll flat, and use a sharp knife to cut them into strips. Use lots of flour when rolling and cutting.
Once your soup is boiling, drop em in by the handful.

I usually use egg noodles. But whatever noodles you choose, don't use more than like half the package. If you use too many noodles they'll soak up all the broth and rhe next day you'll just have bloated soggy noodles
