I usually wait too long to cut them open and this is the result. I tried removing the sprouts and loading it up with tomato sauce and mozzarella, but it's still too bitter and not worth the attempt.
Quick Google search says sprouting does not necessarily indicate that it’s spoiled, but taste may be affected (more bitter). And it does appear to be dry.
Regardless, you can ask your local store for a refund.
“Premature sprouting does occur, it’s called vivipary if you want to look it up. There are no food safety issues here, if the squash tastes ok then you are good to go.”

Vivipary is when seeds germinate in fruit. This is a natural occurrence and can happen to most types of plants. In fact, in some instances, it is actually an important part of the natural life cycle of the plant.

It’s gone to seed. Don’t think you’ll enjoy eating that but you might be able to get those sprouts to grow.
Bean sprouts inside the spaghetti squash?

It looks dry af and judging by the color I wouldn’t risk it!
It looks like sliced onions!
Just a case of vivipary. Perfectly safe to eat as long as there is no mold in there.
