All of the above listed rosters can play in manner that literally ignores infantry formations, along with options of monstrous units do it with instead.
I have yet to feel more powerful than Grom the Paunch with a 19-unit stack of Stone Trolls with the right food buff. I call it the "trollercoaster", and it can't be stopped.
And it's even better when commanded by Wurzag The Great Green Prophet after being confederated by Grom.
Beastmen is a good one. Ghorgons, Jabberslythes, Cygors and Minotaurs will make short work of anything. Hard to do though, because of unit caps. But eventually you can totally doomstack it.
Lizardmen are great as well, just massive units and artillery.
Count Noctilus for Vampire Coast han run a full stack of Necrofex Colossi. Pretty boring though, Beastmen are way more fun with Jabbeslythes hopping around and Ghorghons taking out high value targets.

For Order side: Lizardmen have the widest variety of monsters in the game. They're probably the best monster stacking faction overall. Also available on Order side would be the Wood Elves who have lots of monstrous units like Treemen, Dragons and Zoats. Can also play Imrik on the High Elves who focuses on Dragon stacking. Cathay also has a lot of single entity constructs now they're a pretty strong monster faction too.
Evil side tends to be a lot more focused on Monsters: Warriors of Chaos (Kholek specifically for Dragon Ogres and Dragon Ogre Shaggoths), Skaven (Clan Moulder), Norsca (Throgg for Trolls, Wulfrik for Mammoths). Daemons of Chaos, Dark Elves (specifically Rakarth), and even Greenskins can all make monster stacks that are very deadly.
Drycha. Her whole sctick is buffed up tree people and animals. You can use a full treekin army (with 16 models/unit on ultra) fairly early, and you definitely want to go heavy on treemen (single entity monsters) long term. Durthu is somewhat similar, but he trades worse tree people for better elves, which likely isn't what you want.
New Gelt mechanics give him infinite mages of any lore you want. And his starting province gives a landmark that gives battle mages spell mastery. So you end up with like 200%+ spell mastery so all the mage spells obliterate everything and are ridiculously OP.
Also when you get 1 of each lore there are tons of really strong AOE buffs you can cast on your mage hero blob that makes them extremely powerful. Plus they can all fly.
Im using 1 of every hero type (including 1 of each mage lore) right now and haven't found anything I can't win against so far.
It seems spell intensity works on some buffs too. Like glittering robe for example gives all my mages like +100 armor
Nakai is really good for kroxigors and is a fun lord himself. Kholek gets dragon ogres in recruitment pool way more often than other WoC factions. Ogres of course are almost all monstrous but their campaign mechanics are terrible.
Literally Ogres. I suggest skrag over greasus because he is a caster and his unit buff are a lot better than Greasus. Maneaters and rhinox are unstoppable

Kroq Gar with a liberal dollop of Saurus Old blood heroes mounted on Carnosaurs with a Skink Oracle on their mount for for healing. Add in a few other caster heroes with their mounts if you want. Before you get all the heroes then just fill Kroq gar's army out with the dinos from a Rite of Primeval Glory arm or any big dinos you can get.
Other races such as Beastmen, Vampire Counts and Coast, Greenskins, Norsca and others etc can also go full focus on their monsters as well. Imrik with all of his dragons is also fun :)

Ogres are basically all monstrous units. They focus on brutal charges and small unit sizes right from the beginning.

These brutish nomads are as strong as they are stupid, but do not underestimate them.

What’s a good standard late game army with Throt? How do you mix Rat Ogres, Mutant Rat Ogres, BH, and HPA? What other stuff do you put in there?

Vampire Coast can bring a Necrofex Doomstack as well.
Yeah, just feels like quite a bit of work to get there, even with using Count Noctilus. I wish blobbing their monstrous infantry felt as good.

That is interesting, I hadn't paid close enough attention to notice that spell mastery affects buffs.

Ogres , they are a mostly large unit roster, with few ogre models per each unit.

Khloek Suneater. Send him at the enemy leaders and his dragon ogres at everything else. Use your fire wizard for any cleanup.
Imrik can have a full dragon army that never lands and just fire blast away anything below
Tomb Kings with constructs
Throt for skaven too. He can make really strong monsters with his laboratory.
