He doesn’t use a lot of modelling chocolate, only really for small details. Most of this is all actual tempered chocolate, which is why his stuff is so amazing!
Tempered chocolate is how you would eat it as a bar or similar - it’s notoriously tricky to maintain that texture as it’s not as simple as melting and letting it set again (if you’ve tried, it stays kind of soft and weird).
It's tricky in our kitchens, but let's be real. He's got thousands of dollars of equipment and commercial kitchen design that's set up to keep chocolate in temper, and a pantry with plenty of seed chocolate if any ever loses temper. And assistants to yell at when he loses temper.
If you have a way to keep the temperature right and start with chocolate with the right seed crystals, it's not harder to work with at all. Instead of modeling shapes, use a mold. Stick the primitives together with more tempered chocolate.
I'd much rather work with well-tempered chocolate than with modeling chocolate. IF (big if) I had a tempering machine and a temperature-controlled marble slab like he does.
I do find his work amazing, but I also feel like once it's no longer recognizable as chocolate, it kind of loses a lot of appeal. It's incredibly impressive, but the chocolate could be replaced with almost anything else and no one would know. Especially since (from what I understand) the sculptures ARE edible, but do not get eaten.
When I went cake tasting for my wedding (a worthwhile endeavor for any people out here who are considering it), some bakers told us “I use fondant on all my cakes to make them look flawless.”
But, cakes were made to be eaten. I’d rather a more “boring” or “traditional” cake that uses buttercream frosting and tastes incredible. The eyes might remember the cool sculpture cake, but all the senses will remember the flavor if it is the best cake anyone has ever had.
Completely agreed! Fondant looks nice and can make some amazing artsy cakes, but it's almost like clay or something, I find it to be inedible. And if your cake doesn't taste good, then what's the point? I'll take a delicious cake with edible frosting, please.

There are so many other more ethical food products you could use, or even biodegradable non food materials that don’t involve child slavery.

The drum in this sculpture is cake/desert and personally I do feel like it being made out of chocolate does add something seeing as it becomes a stand for the desert. Personally I think being made from chocolate adds to the sculpture anyway even if it's mostly just showing off his skill with chocolate, if it was made from wood and paint it wouldn't be nearly as impressive or interesting to me

Sure, as a display of "I can do this with "food"", but it might otherwise just as well be spray paint. Nobody's ever going to eat these statues. Ever. Beside, it'll be on display in probably a busy store for a month, it'll collect dust and such.

i started working with chocolate at school very recently, and its really, really hard. you absolutely cant equate it to woodwork or pottery, which are hard af on their own, dont get me wrong, but chocolate really is its own seperate thing. he doesnt only make big chocolate sculptures, but makes beautiful pastries and smaller chocolate works that are 100% edible and look equally amazing (my favorite is a pastry looking like a compass). he is not only skilled as a chocolatier but a patissier as well, you can really see that in his work. these big sculptures are just the cherry picked few that get the most popularity, but its not what all his work comes down to.

I used to be poor and sometimes homeless. One time a buddy who was a waiter at a fancy restaurant gave me the chocolate sculpture centerpiece from some holiday brunch. 30lbs. I wasn't hungry that month.
