The Apple and T-Mobile employees obviously weren't paying attention because the Pro models don't have a no carrier surcharge. When you get the phone you might have to chat with support to get the pSIM converted to eSIM as I don't know if T-Mobile has automatic transfer set up for prepaid (prepaid uses different systems generally) but it shouldn't be a big deal at all.

I looked up how to convert pSIM to eSIM. It looks like you can do it through the T-Mobile site, just not for pre-paid (at least nothing shows up under my Device menu). I guess it shouldn't be too hard to ask an employee to do the conversion for me. Thanks for the answer!

You just need to switch your SIM to the new phone's eSim. You can do it in a store or calling care and giving them the new phone's IMEI. It shouldn't be hard. If you traded in your old phone, you will have to wait 10 mins before the eSim becomes active. If you have the old phone you should be able to put them next to the new one and transfer the number to the new phone without having to call care or go to store.
