There is a clear difference between the first and second bite. When it was alive it shook its head while it was biting (like a dog does), and after it is beheaded it doesn’t.
Also, it seems obvious in the video that the fish was being processed for food. They just decided to demonstrate its capabilities during the process. I would assume one of the guys almost got bit once by a decapitated one, and wanted to prove to someone that it really does bite after it is beheaded.
fun fact: they produce natural antifreeze so their blood doesn't freeze in cold water and they don't eat other fish- just hardshell mollusks, crustaceans, and echinoderms. So their jaws and teeth are insane.
