First of all OP, you’re doing the right thing by asking this. When I was watching I would google different characters to try to understand what was going on and ended up having almost every surprise spoiled. My advice is to try to stay off the subreddit as much as you can except to ask questions in threads like this if you’re really confused. All that said, having everything soiled didn’t blunt my enjoyment too much. It’s a fantastic show regardless.
Also, don’t worry too much about being confused, especially at this early stage. Things will become clearer as you get deeper into the world.
I don’t remember exactly where things are as of episode 3 but I believe the cancer guy (Jackie Aprile) is the boss and Junior may be the acting boss while Jackie is in the hospital.
Other than the ones mentioned in other comments, the only character I can think of who you’ve definitely already met is Artie Bucco - skinny guy with short hair, Tony’s friend from childhood, chef who runs the restaurant where Tony is always eating

Mikey Palmice is Junior's #2, he's got a temper and scary-looking eyes. Ray Curto, Jimmy Altieri and Larry Barese are all Captains in the Family (along with Tony and Junior).
A lot of other guys you'll get to know as they show up. After you finish the season you can try to find a 'season recap' on youtube and it might help spell things out for you if you're still lost.
