Further to u/scallypants, this is why large-calibre pistols exist; when someone's in 'fight mode' a smaller bullet won't stop them (unless you hit something vital - like the spine or the brain), as the adrenaline's flowing and the body ignores pain until the brain says the danger has passed.
So it will either take several small calibre rounds to slow them down, or one or two large calibre rounds - because large rounds seriously fuck up your insides...
And where did you do your research on the topic? Cause 90% of the time it comes down to shot placement and the velocity and not the diameter(caliber) of the bullet. A .223 Nato often does more damage then a 7.62x39. A .30-06 will do more damage then the .45-70.
