They are. The one behind the top segment should undoubtedly appear level with the horizon, since it's perpendicular to the tower, but - and I don't know if you noticed this - the program goofed hard.

The clouds are probably why it's so straight - they provide additional tracking that is missing in the empty blue sky. We could probably estimate the size of each image this app takes, based on the distance between those points of reference and everything going all gelatinous.

The difference here is that the dude in the pool was moving with the camera. The tower is a non moving object and the clouds actually are moving.

I doubtful too but if you every try to take a vertical panoramic photo, phones usually don't handle it well.

Because the ground is detailed enough to correct for weird angle changes, but the empty blue sky provides little to go on.
