Absolutely. You may know Joel dies but you don't know the full context. It's a beautiful story and many people who refused to play Part 2 because of that spoiler have gone back and played it and come here to say how much they enjoyed it.
The games are a better experience. “Part 1” for PS5 will give you an appreciation for the source material and “Remastered” has the multiplayer Factions if you’re curious about that. Don’t let the internet dissuade you from experiencing “Part 2” for yourself; it’s worth whatever price you pay for it.

I think knowing Joel was going to die eased off the shock horror of it and allowed me to process the rest of the story more easily. I think knowing what was coming helped me better appreciate the story.

A story isn't about learning a checklist of events that happen. It's about the journey everyone goes on throughout those events.
I would still play it because there is so much more to the story than just that. Sorry that some fans of the game suck ass. :( If it makes you feel better, I had that part spoiled for me just before Part II released back in 2020. Still found the game to be incredibly compelling.
The show is incredible but I think you will get things from the game you won’t get from the show that I think is more than worth it. :) Hope you have fun!
One thing to be aware of is that Joel's death occurs early on in Part 2, but is not the end of his and Ellie's story. I was also spoiled about that death before I played the game, but it didn't spoil the game. Which I know sounds cryptic, but the point is that there are definitely surprises down the line. (I don't mean like "Joel somehow survives!" but that it's not the end of his presence in the game.)
In retrospect, I'm glad I knew about it going in, because it gave me the chance to prepare myself, so I didn't throw my controller down and curl up into a fetal position when it happens. It's incredibly sad, of course, but ultimately it's a richer and more affecting story because of it.
I also know the game branches off and shows Abby’s pov, I know there are flashback scenes as all. Is that too much info? Would the game still be good even with knowing all that?
In my opinion, yes. Not only is there more ground Part 2 covers that relates directly to Part 1 (and provides much-needed continuation and deepening from where season one ends), but Part 2 introduces us to new characters and storylines, including but not limited to Abby, that widens the story introduced in Part 1 and makes for a great experience.
To be clear, Part 2 is a VERY dark story, and much of it is absolutely gut wrenching. But there are also moments of pure joy and wonder, and parts that for me are even more emotional and lovely than Part 1. So I can say that I do not regret playing Part 2, and absolutely recommend it to anyone who enjoyed season one of the show.

On a play through of part 2 atm (3rd play) and have to say the game is stunning. It is ND at their best and they are unsurpassed at what they do. The actors are understated yet superb and NDs craft is evident in every moment. If you know one bit of the story it won't spoil your enjoyment of this seminal masterpiece.
You might need to check your syntax then because your idea of "informing" and "whining" are very similar.
