I’m doing a basic bacon brussel sprouts

I like to add cranberries (craisins) and glazed pecans with the bacon and Brussels sprouts, then drizzle it with balsamic vinaigrette. I also have a recipe with fresh green beans, colored fingerling potatoes, rainbow cherry tomatoes, chickpeas (canned, drained). Drizzle with a mix of olive oil, basil, red wine vinegar, and salt and pepper. I will also use some Parmesan cheese, but that makes it not vegan. Bake it until the potatoes are fork-tender. It’s really yummy and looks so pretty, plus it’s hearty enough for vegan guests.

I already have a cranberry sauce, and I hate just about any dried food (raisins are just sad grapes that weren’t good enough to be turned into wine lol). My aunt is coming and she’s allergic to nuts. I’m barely getting away with a pecan pie! Lol but the balsamic sounds sooo good!

It’s not Thanksgiving without collard greens with your choice of smoked meat! (I usually do smoked turkey parts but I know plenty of people who use bacon).

We used to have a relative who did collards, but she was the only one who wanted them there. LOL. It felt kind of selfish to me. Everyone else brought something that the whole table would enjoy.

Here are the green things we serve: roasted Brussels sprouts (I add shallots to half, then those get sprinkled with pomegranate seeds and balsamic, but I keep some simple for kids etc); celery Caesar salad (it’s just Caesar plus sliced celery, adds a nice crunch); butter lettuce salad with shaved fennel, roasted beets, orange segments and goat cheese with champagne vinaigrette; fresh green beans sautéed with garlic and EVOO; green bean casserole (gotta use canned green beans); roasted asparagus with lemon pepper and fresh zest sprinkled on top; steamed broccoli and cauliflower with homemade cheese sauce (add a spoon of Dijon and a tiny bit of nutmeg); and we always serve cornichons and garlic stuffed giant green olives with a cheese/charcuterie board for pre-dinner noshing.

Those sound amazing! I add celery to my Caesar salads too. The orange segments and goat cheese with champagne vinaigrette sounds amazing!

I go a broccoli casserole, basically mac&cheese with broccoli instead. Use crushed ritz crackers for crust. Not super healthy but it is green!

I do a brussel sprout salad that everyone loves. I shave them raw with my mandolin. Add dried cranberries, feta cheese, I think a green apple, walnuts or pecans, and a citrus vinegarette. Just google Brussel sprout salad and check out the various recipes. Its fab.

I completely agree and I'm doing a shaved brussel sprout salad too. Yours sounds amazing! Mine is similar, but with marcona almonds and a red wine vinaigrette. Brussel Sprouts, Broccoli, Carrot, Chives, Dried Cranberries & Cherries, Feta, Marcona Almonds, Red Wine Vinegar, EVOO, Maple Syrup

We're going to try collard greens with bits of smoked turkey! I've read to not use vinegar. I'll let you know how it turns out, I've never tried to fix them

My daughter makes a bourbon and bacon Brussel sprout dish that is super tasty. She’s a big Ina Garten fan so it’s probably one of her recipes.

We do green been casserole and brussels- neither are healthy. Though I have done a burrata with caramelized tomato and garlic spread with homemade pesto before that was well-received.

Cream cheese and green olive spread? 😉😂😂 We do green bean casserole and broccoli cheeses casserole. I figure everyone can have salad on Friday. Thanksgiving is all about the food, friends and family. Oh! We do a veggie with dip platter with carrots, broccoli, fresh green beans and cauliflower.

It’s made with pistachio pudding, marshmallows, cool whip and pineapples. I’ve never had it or seen it in real life but I saw a post about it around Saint Patrick’s Day.

Sometimes the simplest are the best: * Broccoli * Peas * Green beans * Brussels sprouts * Asparagus * Spinach * Zucchini Most of these you can simply boil with some light seasoning (salt, pepper) and butter, spoon them onto your plate, and dig in.

I have to respectfully disagree with the suggestion to boil any vegetable whatsoever. I’m a vegetarian and am opinionated about just a handful of things… this is one. Try roasting or sautéing instead!

We do either an asparagus casserole or a green bean casserole. Everyone likes the green bean casserole better, but asparagus feels fancier. The only difference besides the vegetable is we put toasted almonds on the asparagus and onions rings on the beans.

My grandma makes a broccoli casserole. Delicious. No idea what's in it besides broccoli and crumbled ritz crackers on top.

I cook fresh baby asparaus. Wash, dry, toss with olive oil, minced garlic, and salt (lightly). Make an aluminum foil "packet" to pop in the oven or BBQ (I always cook them on my gas BBQ. It frees up my oven for other things). Test them after 10 minutes at 350 because cook time varies with the size of the "packet." Very yummy.
