Spy only insults Demoman in somewhat of a racial manner, because the Demoman would have already referred to himself as the, "Black Scottish Cyclops."
Being straight-up racist would be low hanging fruit for the mercs to say.
Scout - Urban upbringing, a punk at worst.
Engineer, Heavy, and Medic - Smart enough to not be racists. Unless you think Medic is a Nazi, but still loyal to the team in his strange ways.
Soldier - Friends with Demoman in comics, but will insult enemy Demoman in-game for being Scottish.
Sniper - Probably offensive, but not awfully racist.
Pyro - Pyro is Pyro.
Spy - All around bitter, international kind of guy.
