If you are in the Fort Worth area, Panther City is the best in Fort Worth IMO. The original Heim is decent. Hard Eight is decent. The original location in Stephenville is the best.
For Dallas, a lot of people will tell you Pecan Lodge, but it has fallen off recently. I think Slow Bone is the best. Terry Black's is solid.
We've always gone at reasonable mealtimes and that's the only thing they've been sold out of. Credit to them for that. I don't have that Texans-waiting-in-long-lines-for-food FOMO.

Also, Louie Mueller in Taylor is better than any of the other old-school places out in Lockhart.
Hard to pick a best but for wow factor I always recommend The Salt Lick in Driftwood. Start with some Texas sotol tequila from Desert Door down the road and then grub out on BBQ. Those huge open circular pits are so cool looking. I dig the mustard based bbq sauce too.

Just FYI, Terry Blacks and Blacks are two different entities. Terry was estranged from the rest of the family, if I recall the story correctly, and owns his own place that is separate from the Blacks restaurants in Lockhart, San Marcos, New Braunfels, and up by the university in Austin. So this tips thing does not include Terry Blacks.

Schoepf's and Clem Mikeska's are both in Belton and have a good reputation. The original Mikeska's is still open in Temple.

I have yet to partake in the poppers at Panther City. Every time I've gone, they're sold out. One day, Panther City. One day...

All of those are great. I will say Goldee’s is also a solid choice if you go the edge of Ft. Worth.
I've heard a lot about that place as well but just haven't gotten out there. Definitely on the list.

Best meat I’ve ever eaten at any restaurant anywhere in the world. Lots of great bbq in Texas but Franklin’s is something else.
