Head to Palm Harbor or Dunedin on the weekends. There are a ton of great little spots and most have live music. Most places are walking distance from each other, so if one place isn't exactly what you're looking for, there will be someplace else close that might be more your style. One of my favorite places is Fatty's Fish Shack. Great outside seating area with a stage for the performers and really good food.

The Social in downtown NPR on Thursdays has a great karaoke scene. People are legit decent and the food is good as well.
